- Blueberry Buckle -

Ingredients (batter):

  • 3/4 C sugar
  • 1/4 C oil
  • 1 egg
  • 1/2 C milk
  • 2 C flour
  • 2 tsp baking pow.
  • 1/2 tsp salt
  • 2 C Blueberries

Ingredients (topping):

  • 1/2 C sugar
  • 1/3 C flour
  • 1/2 tsp cinnamon
  • 1/4 C softened butter

Instructions:

  1. Heat oven to 375. Grease and flour a 9x9 square pan.
  2. Beat together sugar, oil and egg throughly. Stir in the milk.
  3. Incorporate the dry ingredients till just combined.
  4. Carefully mix in the blueberries, then spread batter in the pan.
  5. In a seperate bowl, combine topping ingredients. Sprinkle over top of the batter.
  6. Bake 45-50 mins, or until toothpick comes out clean.

- Buttercream Frosting -

Ingredients:

  • 1 C softened butter
  • 4 C Powdered sugar
  • milk as needed
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Instructions:

  1. Beat butter in a stand mixer on medium until smooth.
  2. Add in powdered sugar, one cup at a time, mixing until smooth between each cup.
  3. Mix in salt and vanilla, mix. Add milk one Tbsp at a time as needed to reach desired consistancy.

- Easy Chocolate Cake -

Ingredients:

  • 1 1/2 C flour
  • 1/2 tsp salt
  • 1 C sugar (you can sub for 1/2 C for less sugar - tastes the same to me)
  • 3 rounded Tbsp cocoa powder
  • 1 tsp baking soda
  • 1 Tbsp vinegar
  • 1 tsp vanilla
  • 5 Tbsp oil
  • 1 C cold water

Instructions:

  1. Preheat the oven to 350.
  2. In a square pan, mix all of the dry ingredients together. Make three wells in the dry mix for the liquid.
  3. Pour the wet ingredients in each well, and then over the top pour the water. Mix well, making sure to get the corners of the pan.
  4. Bake for 30 minutes.

- Spiced Pecans -

Ingredients:

  • 1 egg white
  • 1 Tbsp cold water
  • 4 C pecans
  • 1 C sugar
  • 1 Tbsp cinnamon
  • 1/4 tsp salt

Instructions:

  1. Set the oven to 225
  2. In a bowl, beat together the egg white and water until frothy.
  3. In a seperate bowl sift together sugar, cinnamon, and salt.
  4. Coat the pecans in the egg white mixture, then mix in the cinnamon dust till well combined.
  5. Cpread mixture on a buttered cookie sheet and bake for 1 hour, stirring every fifteen minutes.
